Salt Crusted Rich Banana Bread

INGREDIENTS

1/2 cup butter, room temperature

1 cup white sugar

2 eggs

1/2 cup sour cream

3-4 medium over ripe bananas

1 teaspoon vanilla extract

1 1/2 cups all purpose flour

1 teaspoon baking soda

½ teaspoon cinnamon

1/2 teaspoon salt

 

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan with salted, melted (about 1/3 stick) butter and refrigerate pan for few minutes. Sprinkle with flaked salt.

 

In the mixer bowl, add room temp butter and sugar.  Using the paddles attachment, turn on the mixer to low at first.  After about 30 seconds, increase to high cream the butter and sugar together until light and fluffy, about 2 minutes.  Scrape down about halfway through. 

 

Add eggs one at a time while paddling until completely incorporated.  Stop the mixer and add cinnamon, baking soda, salt, vanilla, sour cream and very ripe bananas, and flour.  Paddle very slowly until the flour is incorporated then increase to medium JUST until all ingredients are combined and smooth.


Pour into prepared skillet or loaf pan and level off batter. Give the pan a few firm taps onto the counter.

 

Bake at 350 degrees F (175 degrees C) for 50- 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
